Winemaking
Winemaker-Vine grower
My family and surroundings had a close connection with winemaking. My grandfather, Archil Utiashvili, was the director of the Tsinandali Wine Industry Association and Ikalto Winery for many years. My grandmother’s uncle, Vasil Natsvlishvili, was a scientist and employee of the Institute of Viticulture and a famous wine grower. Andro Lashkhi, my grandmother’s aunt’s husband, was a friend of our family and often visited us. He was a professor, a scientist in the field of wine technology and biochemistry, and a doctor of agricultural sciences.
This closeness of my ancestors to viticulture and wine culture determined my interest in this area. Since childhood, I have been creating wine that deserves the approval of others. This became an incentive for me to approach this work more seriously.

I graduated from Georgian Technical University, specializing in welding production technologist. I am sure that the basis for creating quality wine is the right approach to vineyard care. This is especially important when the winemaker himself determines the strategy for caring for the vineyard and the optimal period for harvesting.
In 2010, I bought a vineyard in village Kurdgelauri, and in 2011 I founded Telavi Old Cellar. My goal was and remains to create Georgian wine that will be recognized not only in Georgia, but also beyond its borders.
The first evaluators were my family members and friends. After selling in wine shops, it became more popular. Consumers often thank me for creating such a wonderful wine. There was a case when people from outside Georgia reported that my wine has impressed foreign wine lovers and experts.
Each time, I am proud that “Georgian” has once again become popular outside Georgia. For me, this is an indescribable joy, a great reward and a source of new strength.
Our vineyard

65-70% of Georgian vineyards are located in Kakheti. The vineyards producing the best quality wines here are planted in the basins of the Alazani and Iori rivers, at an altitude of 400-700 meters above sea level.
Our vineyard is located on the right bank of the Alazani, on the slopes of Mount Tsiv-Gombori, at an altitude of 510 meters above sea level, in Tsinandali microzone, in village Kurdgelauri. The climate here is moderately continental. The cool breeze blowing from Mount Tsiv-Gombori leads to a wide range of fluctuations in day and night temperatures, which creates an ideal microclimate for better ripening of grapes. The soil is loamy and rich with minerals, which gives the wine made from the grapes grown here a unique and special character.
At this stage, the area of our vineyard is 2.24 hectares, of which the old vineyard, purchased in 2010, is: 0.74 hectares of Rkatsiteli and 0.1 hectares of Saperavi, and the one planted by me – 0.6 hectares of Saperavi and 0.8 hectares of Kisi.
It is important that the roots of old vines are very deep in the soil. Through them, more diverse minerals reach the plant, which determines the interesting aromas and taste characteristics of the wine. At the same time, old vines are less fructiferous, which determines the high quality and special taste of the wine.
Since 2014, I have been using only biological and environmentally friendly products for vineyard care, as well as herbal infusions prepared by us. To ensure the quality of the wine, I attach particular importance to agro-technological work on vineyard care and grape quality control. In case of a bountiful harvest, we carry out a “green harvest”: operation – removing some bunches to reduce the yield, which helps to improve the quality of the remaining bunches and ultimately results in the highest quality of the wine.
Our winery
The constant search and desire for innovation are an integral part of the development and progress of my winemaking since its inception. By combining the old technology of Kakhuri winemaking (allowing stems and skins to remain in contact during the alcoholic fermentation), modern approaches (aging wine in oak barrels) and my own winemaking technology (taking into account the location of the vineyard and the characteristics of the grape variety), I produce high-quality products.
Currently, the annual production volume is around 8,000 bottles. From growing the grapes to delivering the wine to the customer, each bottle of wine is created by hand, which allows me to have maximum control over the quality.
Freshly picked grapes from the vineyard are immediately transferred to the receiving department of the winery, where they are sorted, changed and pressed. In winter, the sedimentation and stabilization of wine stones occurs through natural cold. After this, the wine is transferred to French oak barrels, where it is aged for one and a half to two years.

Observation and laboratory control allow me to maintain the healthy state of the wine. After bottling, the wine is sealed with a high-quality natural cork, after which the wine continues to age. A year – year and a half after bottling, when the wine reaches the desired ageing we offer it to customers.
Our wine, created with such an approach and desire, has been recognized by sommeliers and wine lovers for many years. It has received many awards at various competitions.
Today, each bottle of “Archil’s Wine” tells the story of Georgia’s eternal beauty, durability, authenticity and is popular in many countries around the world. Our wine is enjoyed in countries such as Poland, Germany, Japan, Sweden, Denmark, England, France, Ukraine and Israel.
